September 19 at PSU Farmers Market — Summer Fruit Meets the First Flavors of Fall
SUMMER FRUIT MEETS THE FIRST FLAVORS OF FALL
This week’s pastry case captures that beautiful moment when the last flavors of summer begin to meet the warmth of fall.
Fresh figs and Sweet Henry peaches are still at their peak, while roasted Japanese pumpkin, maple, and hojicha are bringing the first cozy notes of the new season.
THIS WEEK’S LINEUP
JAPANESE PUMPKIN & MAPLE CHEESECAKE
Japanese kabocha is roasted and puréed before being folded into a smooth pumpkin cheesecake filling, then steam-baked over a maple cake made without gluten ingredients.
Each slice is finished with a cookie made without gluten ingredients, maple whipped cream, and our house-made fig confiture. The gentle tartness of the figs creates a beautiful contrast with the rich pumpkin and maple flavors.
Please note: This item is prepared in a shared kitchen where wheat is also handled. It is not recommended for anyone with celiac disease or a severe gluten allergy.
HOJICHA & FRESH FIG CHIFFON CAKE
A light hojicha chiffon cake layered with two different creams: roasted hojicha cream and fig confiture cream. Fresh figs are tucked inside and generously arranged on top.
LEMON SWISS ROLL WITH SWEET HENRY PEACH & RASPBERRY
Soft lemon sponge rolled with raspberry cream, fresh Sweet Henry peaches, and raspberries. Bright, fruity, and filled with the final sweetness of summer.
SWEET HENRY PEACH & EARL GREY SHORTCAKE
Fragrant Earl Grey cake layered with fresh Sweet Henry peaches and apricot confiture cream, then finished with more seasonal fruit.
HOJICHA TIRAMISU
Hojicha cake layered with creamy mascarpone filling. Deeply roasted and aromatic, with a soft, mellow finish.
FRESH FIG TORTE
Fresh figs are baked directly into a buttery torte until soft and beautifully caramelized, then finished with house-made fig confiture and a dusting of powdered sugar.
